Batter Coatings/Sauces

Batter for Shrimp, Chicken or Veggies

1 cup flour
1 Tablespoons sugar
1 1/2 teas baking powder
1/2 teas season salt
1/2 teas chili powder
2 eggs beaten
1/3 cup milk
1 tablespoon oil or melted butter

Mix dry ingredients then add wet. Dip whatever you want then deep fry. Or us it for a fondue.

Batter for Fish

Dip in flour  -  dip in egg or milk  -  then in bread crumbs OR
Dip in flour  - dip in egg or milk   - then dip back in flour

Dipping Sauce

1 15oz can tomato sauce
1 teas sugar
1 teas oregano
1/2 teas basil
1/2 marjoram
1/2 garlic powder
1/4 salt

Heat all till boil then simmer 30 minutes stirring occasionally.

Barbecue Sauce from GB Christian School Cookbook

1 cup chili sauce - I didn't have the chili sauce so I used a can of tomato sauce and added chili powder.
2 cups ketchup
1 T soy sauce
Juice of 1 lime
2 T brown sugar
Seasoned salt
salt and pepper
2 T Worcestershire sauce
2 T lemon juice
1/4 cup vinegar
2 T honey
2 cloves garlic, minced

When I use to make this I used a can of tomato sauce and I added chili powder to it instead of the chili sauce. I never used the lime because I didn't have it on hand.

Quick & Easy Barbecue Sauce 

Makes: 1 cup

Ingredients:

2 teaspoons olive oil
1/2 cup onion, finely diced
1 clove garlic, minced
1/2 cup cider vinegar
1/2 cup water
1/2 cup ketchup
1/2 cup brown sugar
2 Tablespoons molasses
2 Tablespoons spicy mustard 
1 Tablespoon Worcestershire Sauce
2 teaspoons chili powder 

Instructions:
1. Heat oil in a saucepan over medium-high heat and sauté onion & garlic for 2 minutes until golden brown.
2. Add everything else and bring to a boil. Reduce heat and cook uncovered, stirring occasionally, for about
25 minutes. Sauce with thicken as it cools.

Fresh Pasta Sauce

In saucepan, saute 1 pint cherry tomatoes in oil for 5 minutes., or until skins begin to split. Add 2 cloves garlic, minced, and a pinch of oregano. Add salt and pepper to taste; stir until fragrant. Toss with cooked angel hair pasta. Top with grated Parmesan and baby arugula. Drizzle with oil.
